Bridging Food Science and Biotechnology: HPLC, Microbial Safety, and Fungal Innovations

We invite you to explore cutting-edge research that pushes the boundaries of food science and biotechnology, showcasing innovative approaches from various projects aimed at enhancing efficiency, safety, and sustainability. HPLC-LAPS developed a reliable HPLC method to quantify organic acids in whey, supporting sustainable bioprocessing with Kluyveromyces marxianus. Similarly, DEMQA focused on development of a cost-effective enzyme-based method for extracting high-quality fungal DNA, surpassing traditional methods in yield and efficiency and compared two traditional methods with this method to find the best fungal DNA extraction method. The study of OLESH aims to optimise whey lactose hydrolysis for Saccharomyces cerevisiae by examining pH, temperature, and enzyme concentration effects. It seeks complete lactose degradation to maximise fermentable sugar release. Additionally, it highlights the economic and scientific value of efficient whey utilisation for sustainable, value-added application. Whereas SCOPIC aimed to significantly boost the production of the anti-cancer compound Scopularide A by using co-cultivation strategies, modification of nutrient composition and pellet-morphology. While the other group worked on inspecting the microbial contamination on meat processing knives and developing effective solutions using dishwasher cleaning and UV-C assisted disinfection.
